The Club Training Australia Implement Food Safety Procedures (FSP) training course (SITXFSA001A) is a component of the Food Safety Supervisor certification.
Prerequisites
To successfully to complete this unit you will need access to:
- an active workplace that stores/prepares food
- a probe temperature thermometer
- four different types of potentially hazardous food
- a supervisor who is competent in the use of a probe temperature thermometer
You must complete the unit SITXOHS002A Follow workplace hygiene procedures, before enrolling in this unit.

The Food Act 2006 (the Act) requires every licensable food business in Queensland to have a food safety supervisor. Every licensed food business must provide to the Local Government that issued the licence, information regarding the food safety supervisor for that business. This unit is the second of two units required to meet this certification.
The online Food Safety Supervisor course is suitable for supervisors working in the Retail, Hospitality, Transport and Distribution sectors and consists of two nationally recognised units. SITXOHS002A Follow workplace hygiene procedures and SITXFSA001A Implement food safety procedures. These competency standards are in alignment with the current national food safety training agenda, are approved by the National Quality Council (Department of Education, Science and Training).
This unit describes the performance outcomes, skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food within a range of service industry operations. It requires the ability to follow predetermined procedures as outlined in an organisation food safety program.
Food safety is nationally legislated by the Food Standards Australia New Zealand Act 1991 which provides for the operation of a statutory authority known as Food Standards Australia New Zealand.
The Australia New Zealand Food Standards Code (the Code) developed by this authority contains an individual standard for food safety practices. This unit of competency complies with the legislative requirements for food safety and safe food handling practices as outlined in the Code.
The legislative requirement for a business to comply with the national standard for food safety practices, along with training and certification requirements, differ between state and territory governments.
The Club Training Australia Implement Food Safety Procedures (FSP) online training course meets the requirements of the National Training Package and contains the following element.
Element 1 – Implement procedures for food safety.
- Access and use the relevant documents from the organisation food safety program.
- Follow all food safety policies and procedures correctly and consistently according to organisation food safety program requirements to ensure compliance of all food handling practices.
- Control all food hazards at critical control points.
- Complete any food safety monitoring processes and complete documents as outlined in the food safety program
- Identify and report any practices that are inconsistent with the food safety program.
- Take any corrective actions within scope of job responsibility for incidents where food hazards are found not to be under control.
Element 2 – Store food safely.
- Select food storage conditions appropriate to the specific food type.
- Store food in the appropriate environmental conditions so that it is protected from contamination and to ensure its freshness, quality and appearance.
- Store food at appropriately controlled temperatures and ensure that any frozen items remain frozen during storage.
Element 3 – Prepare food safely.
- Prepare food in a safe manner to ensure that it is protected from contamination.
- Use cooling and heating processes that will not adversely affect the microbiological safety of the food.
- Monitor temperature of food throughout the preparation process to achieve microbiological safety of the food at all times.
- Ensure the safety of food prepared, served and sold to customers under other conditions.
Element 4 – Provide safe single use items.
- Store, display and provide single use items so that they are protected from damage and contamination.
- Do not re-use items intended for single use.
Element 5 – Maintain a clean environment.
- Clean and sanitise equipment, surfaces and utensils used during food handling process.
- Use appropriate containers and do not allow the accumulation of garbage and recycled matter.
- Identify and report any equipment that requires cleaning or maintenance to ensure its cleanliness and safe operation.
- Dispose of any chipped, broken or cracked eating, drinking or food handling utensils or report these if disposal is outside scope of responsibility.
- Take measures within scope of responsibility to ensure food handling areas are free from animals and pests and report any incidents of animal or pest infestation.
Element 6 – Dispose of food safely.
- Mark and keep separate from other foodstuffs any food identified for disposal until disposal is complete.
- Dispose of food promptly to ensure no cross-contamination of other foodstuffs.
What is a food safety supervisor and what is their role?
A food safety supervisor is a person who has advanced food safety skills and knowledge and has the ability to oversee the food safety operations of the food business.
Will completing this course certify me as a Food Safety Supervisor?

Allow approximately five (5) to six (6) hours to complete your Food Safety Procedures online training course.
How much does the course cost?
The Food Safety Procedures online training course is $70 which includes access to the Club Training Australia Learning Management System for six (6) weeks, support from our qualified trainers and assessors and a nationally recognised course certificate upon successful completion.
How long do I have to complete my online course?
From the time of enrolment, you have six (6) weeks to complete your Food Safety Procedures online training course.
